The interior is crafted from high-grade AISI 304 18/10 stainless steel, offering exceptional hygiene and durability in intensive food production environments. The exterior is finished with sturdy grey “plasteel” sheet metal, combining resilience with resistance to environmental wear. Walls and doors feature 80 mm of thermal insulation, while the reinforced stainless steel floor includes 60 mm of insulation, ensuring stable temperatures and energy efficiency.
The gentle cooling system, using indirect ventilation, is specially engineered to preserve dough moisture and structure – its soft airflow prevents surface drying or cracking during fermentation. The built-in steam generator offers precise humidity control during proofing phases, making the unit versatile for a range of pastries—from buttery croissants to long-fermented breads.
Operation is managed via a user-friendly 7-inch touchscreen control panel, which is multifunctional and multilingual, well-suited to professional kitchens. The system allows the programming of various cycles—fermentation, pause, cooling, etc.—optimizing workflow according to your production schedule.
